Hey there 🙂 , The weather this week doesn’t exactly emulate Summer and when it’s raining I NEED comfort foods. Instead of reaching for refined carbs like I sometimes do, I decided to make these Sweet Potato & Poached Egg Boats. In the beginning I wasn’t sure how the combination would taste together but I figured it is a balanced meal so I’ll give it a try. Luckily, it tasted amazing and filled the craving I had for comfort food and so, I decided to feature it for this week’s Recipe of the Week.
Sweet potato has many health benefits but particularly the one vitamin I always look for Vitamin B1 & B2 which help to improve symptoms of anxiety and depression. They also contain vitamin B3 which can help improve cholesterol levels and your heart health. Eggs are an amazing source of protein but also contain vitamins B6 & B12 which are also amazing in improving and stabilising moods and your emotional health. Spinach is just an all round great food and I literally add it into every meal so threw some in.
I have outlined the recipe below, it’s pretty quick and simple to make like always (cause I’m lazy). You could also make this dish for breakfast, lunch or dinner which I find incredibly convenient lol. Let me know if you give it a try and what you think 🙂
One medium sized sweet potato
Handful of spinach
Salt & Pepper
Preheat the oven at 200 degrees. Cut the sweet potato evenly down the middle forming two boat like shapes.
Place the sweet potato into a roasting dish, drizzle the olive oil for moisture and season with salt & pepper.
Roast for 20-30 minutes
With eight-ten minutes remaining in the roasting of the sweet potato, bring a saucepan of water to the boil.
Wash and chop your spinach to your preference.
Poach your two eggs in the boiling saucepan for five minutes (longer if you like them hard).
Everything should be ready at the same time if timed properly, Dish up your sweet potato boats, layer your spinach, add your poached eggs on top and season to serve.
