Vegan Butternut Squash Courgetti

Hello 🙂 . I was vegan about two years ago for about six months and loved it. I had so much more energy, lost weight and my skin hair and nails all grew stronger and brighter. I was out one evening and decided to treat myself to a slice of chocolate cake after all of my, what I considered, sacrifice and it went downhill from there. So I recently watched the documentary on Netflix called ‘What the health’ and went straight back to a vegan diet that same day. I’m still educating myself on the diet and supplements to make sure I’m taking in all of the proper nutrients and have been experimenting with recipes and meal ideas.

I made this butternut squash courgetti and loved how they tasted together topped with cherry vine tomatoes & a DIY (slightly accidental) dressing. Butternut squash alone is a good source of protein, fibre and all of my favourite B vitamins which help with improving your mood. I was also full up afterwards and didn’t even need to snack. I have outlined the recipe below if you’re interested in giving it a try 🙂 .

 

Ingredients:

  • Butternut Squash (try pick the one with a long neck)
  • 1 Courgette
  • 1 Garlic clove
  • Olive oil
  • Cherry Vine Tomatoes
  • Salt & Pepper (to season)

 

Method:

  1. Skin the butternut squash ‘neck’ and chop length ways into 3-4 pieces.
  2. Using a spiralizer. Spiralize the butternut squash strips & the courgette
  3. Heat olive oil in a pan on medium heat, crush your garlic & add butternut squash & courgetti to the pan also.
  4. While waiting for the butternut courgetti to soften, add a vine of cherry tomatoes to a microwave safe bowl, drizzle with olive oil and season with salt and pepper. Place in the microwave for one minute. (Don’t judge me for using the microwave)
  5. Once the butternut courgetti is ready, serve on a plate and add the vine of tomatoes on top. In the bowl that contained the tomatoes there should be residue olive oil and tomato juice, I then drizzle the mixture all over the dish for extra flavour and its delicious!

** Tip: Try and leave heating the tomatoes in time so they are ready at the same time as the butternut courgetti                         as I find the dish nicer when the sauce mixture is hot**
