Hello 🙂 . I was vegan about two years ago for about six months and loved it. I had so much more energy, lost weight and my skin hair and nails all grew stronger and brighter. I was out one evening and decided to treat myself to a slice of chocolate cake after all of my, what I considered, sacrifice and it went downhill from there. So I recently watched the documentary on Netflix called ‘What the health’ and went straight back to a vegan diet that same day. I’m still educating myself on the diet and supplements to make sure I’m taking in all of the proper nutrients and have been experimenting with recipes and meal ideas.
I made this butternut squash courgetti and loved how they tasted together topped with cherry vine tomatoes & a DIY (slightly accidental) dressing. Butternut squash alone is a good source of protein, fibre and all of my favourite B vitamins which help with improving your mood. I was also full up afterwards and didn’t even need to snack. I have outlined the recipe below if you’re interested in giving it a try 🙂 .
** Tip: Try and leave heating the tomatoes in time so they are ready at the same time as the butternut courgetti as I find the dish nicer when the sauce mixture is hot**
