Having recently turned vegan again my love for granola was in jeopardy as pre packaged granola is rarely vegan approved. I decided to make my own in bulk to last throughout the week and sometimes into a second week if stored correctly. There are so many benefits to a healthy diet in regards to anxiety but one of the downfalls I find to eating healthy is the necessity to pre plan your meals. Spending one day at the beginning of the week making everything from scratch and preparing the meals that you can’t cook in advance is time consuming, although worth it. To make it as least time consuming as possible I try to find or create recipes that are quick and easy to prepare, like this Vegan Peanut Butter Granola.
I know that most healthy sweet treats contain peanut butter these days as a combining agent but if peanut butter isn’t to your taste, with this recipe I don’t find it’s taste that obvious. I really love how it came out and I found myself snacking on handfuls of the granola on it’s own when I was on the move. Alternatively, it is a great addition to some fruit or yogurt for breakfast or dessert. I found the recipe so quick and easy to follow and have made it every week since I discovered it first. When it is baked and cool I store it in a tupperware box or a lunch bag in the press and use it just like I would pre packaged granola.

2 cups of oats (organic is possible)
1/4 tsp of sea salt
1/4 cup of natural peanut butter
1/4 cup of maple syrup (honey if you are not vegan)
1/2 tsp of ground cinnamon
1/2 tsp of vanilla extract
What to do:
Preheat oven to 160 degrees C. and grease your tray to set aside
Mix together the oats, cinnamon and salt in a bowl
In the microwave or in a pan, melt the peanut butter and maple syrup (or honey) together until soft. Remove from heat and add the vanilla extract.
Mix the dry ingredients together with the peanut butter mixture until well combined and spread on your greased tin.
Bake in the oven until golden brown approx 20-35 mins.
